Unlike the sailor who famously sights the coast long before reaching port, the farmer works closely with the pig long before its ribs reach the kitchen. Thirteen in number, these ribs encase the chest of our porcine friends, running from the base of the neck to the base of the tail. The curly reputation of the tail may well stem from the pressing urge to open a good bottle of wine when sitting down to a pork chop… Depending on whether it comes from the tenderloin (lower spine), the rack (mid-back), or the collar (nape of the neck), the pork chop offers an eye of meat with varying degrees of marbling, yet always wonderfully tender—a quality it readily retains after cooking, provided it is prepared gently.
